Mulaku bajji / Chili fritters / Mirchi pakoda

Mulaku bajji is large, mild chili coated in batter and deep fried in oil.Remember the day you are at home ,it rains heavily, u decide to lean on the railings in the verandah and stare outside .As you sit there blissfully watching the water make its course through your garden plants a voice calls u from behind hands over a plate of hot hot bajji and a nice hot cup of tea... ahhaaaaa....don't tell me you did not love that... what do u call it?...simple pleasures right!! :)

Mahogany cake / Chocolate and coffee cake with fudge frosting

Mahogany Cake may have got its name from the wood which is used to make boat , furniture etc..The wood is sturdy but does not have even coloring and could have been the perfect reason for naming it Mahogany cake and it was just the right excuse for me to make this cake for fall with a two tone of browns...If u will look closely u can see some wood grains on the frosting too:)

Chocolate and raspberry cupcake

Chocolate and raspberry cupcake is a moist one ,raspberry stands out with a fruity note and lil tartness. Chocolate is not so pronounced in flavor but giving only some color.

My daughty likes anything in chocolate and tusker leans more to fruits so I wanted to make both happy in one shot and there you go I made cupcake with a red velvet cake recipe from joy of baking by just substituting  the color part with homemade raspberry extract and I must say I am so happy with the results.

Easy Chicken Biriyani -Kerala style / No ghee, less oil version

             Chicken biriyani is a world famous rich meal with chicken , flavored rice ,nuts and raisins......and I am saying no ghee hmm.....I know you will hate me for this .But when I say chicken biriyani , in terms of flavor and color  minus ghee and less work... I hope you will have the good heart to read till the end :)

Sooo.. this recipe is tailored to suit my requirement for a not so special day but an ideal Sunday lunch  .Try it, if u are ready to forgo some splurge then I bet you will never go back to the old extravaganza .

Vegetable clear soup / Soup for the sick / Low cal soup

Soup with vegs and some spices made with get well soon wishes.Well ,when your body says stop..heed to the request and make it feel better with vegetable clear soup.

Ingredients for serving 3:

Carrot - 1(Cut into matchstick size)
Cabbage-a small piece (cut into thin long slices)
Onion -1/2 of 1 -White-Cut lengthwise
Celery- 1/2 stick(chopped)

Ginger-1 big piece (Cut into julienne )
Garlic- 3 to 4 flakes (cut into small pieces)
Cumin seeds-1 tsp (crushed)
Peppercorns- 1 to 2 tsp powdered (depending on ur withstanding capacity:))
Dried basil-1 tsp (crush it with the ur palm)
Crush red chili flakes- a small pinch
Bullion cube-1/2 (I used maggi chicken cube,u could use veg cube too)
Lime - 1/4 of 1 per serving
Salt to taste

Method:


Heat oil add ginger and garlic when the raw smell goes add chili flakes,onion ,carrots saute well then celery and cabbage saute on high heat now then pour 3 cups water(1 cup per serving) then let it boil.Now season with cumin,pepper powdered,dried basil ,salt .Let the flavors sink in, let it boil but stop before the veg becomes too limpy.
Serve piping hot with parsley or coriander leaves.


Note:

I make clear soup all the time and it peps me up when my head is heavy.
I know it works best for cold too and u r  sure to feel better as the spices are going to open up you nostrils.....but I am not a doctor so hope u will use ur discretion to judge if it right for u:)

Sambar / Thenga aracha sambar /Sambar with coconut -(Palakkad special)

Sambar is a gravy dish made in southern parts of India .It has so many different variations and is an important item in sadhya.This recipe here is from  my ancestral home in Palakkad .I love calling it authentic... if u don't mind .Sambar is made very often for lunch so by mid morning the distinct aroma of the roasting spices starts  to kick in ,which  is hard for one to ignore. With a large backyard and farms, you guessed it right many of the vegs came from a small kitchen garden.

Falooda is an ideal summer dessert  made with many ingredients all layered and served chilled.There are different textures and flavors going to roll around your taste buds..are you ready for it ?




Falooda is a kaleidoscope of colors and shapes thrusting against the wall of the glass  container competing for attention wow..it is royal  with rose syrup and basil seeds looking like rubies and pearls..Is my imagination running wild eh?? can't blame mee!!Smileys
